Ingredients

  • 1 lb (450g) beef sirloin or tenderloin, thinly sliced into strips
  • 2 tbsp olive oil
  • 2 tbsp butter

  • 8 oz (225g) mushrooms, sliced (button or cremini are good)
  • 1 cup (240ml) beef broth
  • 1 cup (240ml) sour cream
  • 2 tbsp all-purpose flour

  • Salt and pepper, to taste
  • 2 tbsp chopped fresh parsley (optional, for garnish)

Instructions

  1. Prepare the Beef: Season the beef strips with salt and pepper.

  2. Sear the Beef: Heat the olive oil in a large skillet over medium-high heat. Add the beef in batches (to avoid overcrowding) and cook until browned on all sides, about 2-3 minutes per side. Remove the beef from the skillet and set aside.

  3. Sauté the Aromatics: In the same skillet, add the butter. Once melted, add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another 30 seconds.
